pesto spinach grilled cheese

Hello everybody!

So, as of about a week ago, I am officially a vegetarian! It's all very exciting, and it's something I've been wanting to do for a very long time. I know that it won't be easy but I am happy with my decision.

Anyways, in lieu of that decision, I decided to make myself a vegetarian spin off of the classic grilled cheese!

Pesto Spinach Grilled Cheese
Quick, Vegetarian, Delicious!

Ingredients: 
2 Slices Whole Wheat Bread
6 Medium Slices of Cheddar Cheese (or enough to cover one piece of bread - cut them thick!)
2 Tablespoons Pesto
5-7 Spinach Leaves
1 Tablespoon Coconut Oil

Heat your panini press (or skillet) and put some coconut oil in the pan until it melts. Spread the bread with the pesto (on both pieces!) and add the slices of cheddar to one piece of the bread, and add the spinach leaves on top. Then, place the other piece of bread on top and simply grill until golden brown!

I was surprised at how amazing this turned out - definitely something I will be making it again! Serve with a side of fruit or veggies (I did pineapple, bananas, and strawberries for my fruit salad) and you're good to go!
